Tomato and Mixed Bean Pasta

Ingredients

  • 500 gms penne pasta (or pasta of choice)
  • 1 tblsp extra virgin olive oil
  • 1 onion finely sliced
  • 1 garlic clove crushed
  • 1 jar pasta sauce (check the label for vegan option)
  • 1 can mixed beans drained and rinsed
  • 100 gms firm tofu crumbled
  • 1 cup mushrooms sliced
  • 1 green capsicum finely sliced
  • 1carrot grated
  • 1/2 cup basil shredded
  • 1tblsp chilli sauce

Method

  1. Prepare pasta as instructed on packet, drain and set aside.
  2. Meanwhile heat oil in saucepan, add onion, garlic, capsicum and tofu, cook until tender.
  3. Add pasta sauce, mushrooms, chilli sauce, carrot and cook for a further 3 mins.
  4. Add beans, basil and pasta, heat through and garnish with coriander or parsley.
